Ground Turkey Taco Meat, Black Beans, Tortillas and Cheese married together in this delicious Casserole! 

An Easy Casserole to satisfy your craving for Tacos and Burritos all in one! We started experimenting with portions, flavors and ingredients 3 years ago when living in Texas! We wanted to keep this delicious Family Approved Casserole as simple as possible without lacking flavor! Our creation came with many earlier fails, like dried out Tortillas, we have solved that problem and it is a winner in our home! If there are any leftovers, it is first come, first serve for lunch!

Prep Time: 45 Minutes
Baking Temperature: 375 Degrees Fahrenheit
Baking Time: 20-30 Minutes
Pan Size: 13X9 Inch
Servings: 6-8 (Depends On Your Families Appetite!)

Taco Black Bean Tortilla Casserole Ingredients:

1 Pound Ground Turkey
1 Onion
1 Green Bell Pepper
2 Tablespoon Fresh Minced Garlic
2 Tablespoon Lemon Juice
2 Tablespoons Ground Cumin
1 Teaspoon Chili Powder
1/4 Teaspoon Black Pepper
1 Teaspoon Salt
3/4 Cups Water
1 Pound Dry Black Beans Cooked or 3-15 Ounce Cans Black Beans
1/4 Cup Chopped Fresh Cilantro or 2 Tablespoon of Dried Cilantro
1/2 Cup Water
2 Cups Shredded Cheddar Cheese
8 Wheat or White Flour Tortillas
Olive Oil (for greasing the pan)

Taco Black Bean Tortilla Casserole Instructions:

1. If you are using Canned Black Beans, then skip to #2 Instructions!
If you are using Dry Black Beans, they will need to be cooked first before moving to next step.
Soak the Dry Beans overnight! Then we usually put the Black Beans in a crock pot, with WATER ONLY, in the morning and let them cook about 4-6 Hours until soft!

Tip: If you don’t have time to soak the Dry Black Beans overnight, you can put them in a pot of water, get them to a boil, then simmer with a lid on for about 2 Hours until soft! Do not put seasonings in!

2. First thing to do, is prepare the Ground Turkey meat. On the stove top at Medium heat, cook up the Turkey meat until almost done, then add Chopped Onions, Green Bell Peppers and Garlic! 
It will look like this!

3. Let the Ground Turkey, Onions, Green Bell Peppers and Garlic cook up, while stirring occasionally on Medium Heat. (About 15-20 Minutes.)
Cook until the liquid is gone and the Ground Turkey starts Browning. The Vegetables will be slightly firm! (The Browning of the meat has loads of flavor, we think this step is important!)
It should look like this when ready for next step!

4. Now it’s time to Season! Turn the Stove top down to Medium-low. Add Lemon Juice, Cumin, Chili Powder, Black Pepper and Salt. Stir, making sure seasonings are mixed well. Add 3/4 Cups of water to the Taco Meat, then Simmer for 20 Minutes.
Should look like this before Simmered!

5. After the Taco Meat is done simmering, there will be less liquid and the meat will have broken down a bit! Add Drained Black Beans to the pan and Chopped Cilantro, mix!

6. PreHeat Oven at 375 Degrees F.

You will need a 13X9 Inch Casserole Pan greased with Olive Oil.
Now scoop about 1 cup of Taco Bean Filling on bottom of pan and spread around.
Lay down 4 Tortillas on top of that, scoop more Taco Bean Meat mixture and even it out. Sprinkle 1 Cup of Cheddar Cheese on top!
First layer should look like this!

7. Repeat another layer, this should use up the rest of the Tortillas and Taco Bean Mixture, add the last cup of cheese! See pic below!

8. Final step, pour 1/2 cup of water around the edges.
This might sound strange, but the water helps keep the tortillas from drying out and creates a casserole that is moist but holds together!
Bake for 20-30 Minutes,making sure the cheese is melted!
Take out and cool a bit before cutting and serving! Garnish with Cilantro if desired.
